Watermelon Balsamic Salad
I’ve had this watermelon balsamic salad a few times and I love it! With this warm weather this salad makes for a wonderfully refreshing, tasty and healthy meal. This recipe serves 4-6 people and takes about 20 minutes to prepare. I’ve make a couple of modifications to the recipe that I feel enhance what is already awesome.
Ingredients
- 4 – 6 cups of watermelon cubed
- 1/3 of a red onion thinly sliced
- ½ cup of crumbled feta cheese
- ½ cup of fresh chopped mint
- 4 – 6 cups of lettuce of choice (some recipes don’t use lettuce, but I recommend something light like a spring mix)
- 2 BBQ chicken breasts sliced or cubed (optional – but nice if looking for a protein source)
- ¼ cup of balsamic vinegar
- ½ cup of olive oil or oil of choice
- 1 tablespoon of Dijon mustard
- 1 tablespoon of honey
- 1 clove of garlic minced
- Salt and pepper to taste
Directions
Put the watermelon, onion, feta, mint, lettuce and chicken (optional) in a large bowl. In a separate small bowl whisk the oil, mustard, vinegar, honey and garlic together and salt and pepper to taste. Pour the dressing over the salad and toss to combine. Serve and enjoy 🙂
